Roasted Vegetable Pizza
A fresh, exciting gourmet pizza, featuring glorious feta cheese and tasty roasted vegetables. A delight for vegetarians and meat-eaters alike.
¼ pumpkin, sliced into 2 cm chunks
½ jar of char grilled roast capsicum
1 large onion, finely chopped
3 small zucchinis, sliced
2 tbsp virgin olive oil
100 ml spicy tomato pizza sauce
100g cubed feta
fresh basil leaves
Heat oven to 180°C.
Put the olive oil, capsicum, onion, pumpkin, and zucchini slices in a baking tray, bake for 10 minutes until pumpkin is tender.
Roll out pizza dough to edges of circular pizza tray. Spread tomato sauce base over dough.
Then spread the roasted vegetables and feta cheese evenly over the sauce.
Bake at 180°C for 15 – 20 minutes until bread base is cooked to a light brown on the edges. Sprinkle with fresh basil and serve hot.
