Pasta al Amatriciana
The flavours of spicy vine-ripened tomato and smokey bacon come together in amatriciana sauce.
2 tablespoons of olive oil
4 onions, chopped
4 rashers bacon, cubed
½ cup chopped speck
4 cloves garlic, crushed
2 cans (800 mls) peeled whole tomatoes
3-4 fresh tomatoes, skinned and deseeded
2 tsp raw sugar
200 mls Taylors Promised Land Shiraz Cabernet
Heat oil in a medium sized pan and saute the onions and garlic until soft, then add bacon and speck.
Sauté a further 5 minutes.
Stir in tinned & chopped fresh tomatoes, sugar and wine,
Add salt and pepper. Cook for 40 – 45 minutes on low heat.
