Wine Colour
On release, the wine is deep opaque red with a vibrant red tinge.
Wine Bouquet
The wine has a brooding aroma of rich red berry fruit. The fruit aromas are balanced by a subtle eucalypt undertone. French oak maturation is also evident with subtle aromas of tobacco leaf, cedar and spice.
Wine Palate
This is a wine of great intensity. It has distinctive black fruit flavours, spice and a hint of black olive. Subtle oak characters of coffee and cigar are also evident. The tannins are fine and elegant – a hallmark of the varietal. The palate is complex and fulfilling and lingers on the finish.
Cellaring Notes
This wine has been crafted to be enjoyed upon release but will continue to develop and reward patience with careful cellaring up to and possibly beyond 2018.

Taylors Cabernet Sauvignon 2007
Blackcurrant and fractionally stewed cherry fruit, mint and appropriate toasty sawn cedar oak. Medium to full bodied, rugged and a bit tannic but in the nicest possible mouth cleansing way, with good fruit married to savoury olive/coffee flavours. The acid is just a bit twangy and thereÆs a hint of black tea bitterness on the finish but itÆs a good wine of robust appeal and honest charm. Should look better again in a year or two as well.

Time to Renew That Semillon Relationship
Medium-bodied, firmish cabernet that is still quite tight and shy. Needs another year to really pump out its stuff. Good structure and weight with cedary oak and light red berry fruit.

Buying Guide
Surprisingly firm in structure for a wine in this price range, with crisp acids and fine-grained tannins framing flavors of red currants, cinnamon and vanilla.
