Wine Colour
At release, the wine is a pale yellow.
Wine Bouquet
At release, the wine displays clean citrus/lemon fragrances along with lifted floral blossom, toffee almonds, crème brûlée and underlying hints of vanilla and rose water.
Wine Palate
Initially the wine displays fresh citrus zest and stone fruit with a subtle honeyed toast and poached pear richness. The mid-palate then showcases a creamy softness, layered with vanilla and sweet spice. Overall, the wine is well-balanced with a fine, delicate mousse and finishes with clean and crisp, refreshing acid. Nuances of crème brûlée, quince, and a tingling minerality accompany the finish.
Cellaring Notes
This wine is crafted for immediate enjoyment but will also reward careful short-term cellaring.

This release signifies the first ever sparkling wine made by family-owned Taylors Wines from Clare Valley in South Australia û celebrating their 40th vintage. The wine has been released under both the traditional sparkling cork and also the new Viiva screw cap (a screw cap specially designed for sparkling wine). Made from pinot noir and chardonnay grapes in the traditional method, this sparkling has clean citrus flavours with some further complex flavours of almonds and vanilla û finishing crisp and dry.

I have included this on for two reasons ù itÆs a good wine but also because it uses a special screw cap instead of the traditional cork. But the main reason is the quality. ItÆs very good, with a meaty influence from the pinot and a fresh bready, citrus character from the chardonnay.
