Generous ripe fruit flavours of the Clare Valley are balanced with elegant, fine tannins, lifted mint character and velvety finish of the Coonawarra.
Sticky
At release, the wine has a deep crimson red colour to the centre with a youthful purple hue to the edges. There are lifted aromas of dark cherry fruit along with subtle choc-mint and a hint of eucalypt. On the palate, this is a rich, full-bodied wine with intense flavours of cassis and blackberry fruit along with attractive oak characters of cigar box and tobacco leaf Overall, the wine is well balanced with complex, well-integrated, elegant tannins providing structure and an intense, persistent length to the finish.
The grapes were gently de-stemmed and transferred to small static stainless steel fermenters. A smaller parcel of the grapes were cold soaked at 6 degrees C for 5 days to deliver increased fruit expression. The fruit was then fermented at a constant warm temperature using a Cabernet-specific yeast isolate. Gentle mixing using inert gas occurred 2 – 3 times over the course of the day. The wine was then gently pressed to a French oak barrels (50% 1 year old, 50% 2 – 3 year old) for secondary, malo-lactic fermentation. Post MLF, the wine was transferred back to barrel for maturation before being fined, filtered and bottled in August 2017. Blend Percentages - Coonawarra - 76% Clare Valley - 24%,
In Coonawarra, there was an excellent start to the season, with average winter rainfall ensuring good soil moisture and even budburst. Spring however was not typical, being very dry and one of the region’s warmest, advancing flowering in November by about 2 weeks. Fortunately the warm and dry weather during flowering promoted a fast and even berry set and then good even maturity similar to other excellent seasons of the past. Very dry conditions continued through December, so berries remained small with thick skins. Ripening was set up perfectly with the vines receiving a refreshing drink of rain in mid-January. Coonawarra’s summer, in contrast to the spring, was classic, with warm days and cool nights. This provided a long and cool ripening, ideal for Cabernet Sauvignon. In the Clare Valley, the growing season in the lead up to vintage 2015 saw slightly higher than average rainfall initially and then very little fell, making it the driest ever August recorded. These conditions were unfortunately conducive to frost. The first evidence of budburst appeared in the last week of August which is relatively normal. Rainfall for spring was well below average and not only was the spring weather extremely dry, it was also warm and windy. These conditions led to higher evapotranspiration (water loss), and despite our irrigation effort during October and November, still had a detrimental impact on flowering with resultant bunch numbers down on average. December and January were relatively mild, with rain falling during the second week of January. The moisture was a welcome relief after such a dry spring and the vines on the estate responding well for both yield and quality.
