On release the wine is a very pale straw colour with a youthful green hue. It has intense lifted aromas of melon and lime with hints of stone fruits. There are underlying tropical notes of green pineapple and guava and subtle secondary characters of flint, cedar and spice. The palate delivers what the bouquet promises; citrus fruits, fig and melon flavours along with a clean, mineral acidity and a touch of lemon zest. Texturally, it is very delicate, with a creamy mid palate and integrated oak. The Clare Valley parcel delivers mid palate fleshiness whilst the Adelaide Hills component contributes restrained mineral notes that are typical of this region. Overall, the wine has a great palate line with length which lingers long after the wine is consumed.
All parcels were quickly harvested in the cool of the early morning to retain the fresh varietal characteristics. The fruit was gently whole berry squeezed in our refrigerated Pera press. All of the free-run juice was fermented in tight grained French oak barrels. 60% of the barrels were new, 20% 2nd use and the remainder 3rd use so as to give great structure while retaining the vibrant fruit. Half of the parcels were wild fermented with the remaining half fermented using a texture building strain of yeast that is low foaming and designed for barrel ferments. After fermentation, battonage, otherwise known as yeast lees stirring, was employed to add a creamy texture to the palate. After maturation of 8 months in barrel, the wine was blended on the bench from both regional parcels to a specific taste profile and minimal fining and filtration was employed before final bottling. In the Clare Valley, rainfall was below average for the season, but it was not the amount that had the biggest impact; it was the timing. Mother Nature saw fit to dole out just the right amount of water at just the right time for maximum positive impact on the vine’s health and importantly, the quality of the fruit produced. In fact, this was just one of the factors at play when it comes to the vintage being lauded as one of the greats. Firstly, the vines were ‘stress free’ heading into the winter period, creating the potential for a superior crop. Secondly, conditions were ideal during flowering and then lastly, the threat of frost did not eventuate. All these conditions combined to create what called be described as ‘the perfect storm’ for an excellent vintage. The Chardonnay looked particularly outstanding with amazing flavour and acid structure. In the Adelaide Hills, a warm dry spring resulted in an early start to the 2016 season with cold conditions in August and September delaying budburst slightly. Good fruit set conditions, combined with excellent flower development, resulted in average to above average crop potential across the region. The dry conditions meant that disease pressure was very low for the season. Harvest began early with higher than average crops but with good sugar-acid balance and well developed flavour. Continuing cool conditions, together with higher than average crop loads resulted in a long vintage with excellent grape and wine quality.
