Colour At release, the wine has a deep crimson colour with a purple hue to the edge.
Nose The wine has complex and enticing nose showing dark berry fruit along with juicy black plum, spice, cedar and hints of chocolate and roasted coffee. Mouth-watering wafts of spice and mocha oak invite you to taste.
Vintage Conditions Growing conditions leading up to vintage 2012 were relatively mild, with regular spring rains promoting excellent vine canopy growth. Budburst was approximately 10 days earlier than 'average', and this early start flowed through until harvest time with most varieties harvested 1 to 2 weeks earlier than in a 'typical' year. Harvest conditions were excellent with only one substantial rain event occurring during harvest. Whilst it happened after most white varieties were picked, it had a positive effect on the red varieties, appearing to freshen them up, particularly the dry-grown blocks. Ideal ripening and flavor development conditions persisted to the end of April when the majority of the harvest was completed. Overall, yields were somewhat lower than long-term averages but our winemakers report that quality is outstanding across all varieties, with intense colour and excellent flavour development.
Oak Maturation A percentage of the wine was barrel fermented and the final blend was matured in high quality, water-bent American oak barrels for 12 months prior to filtering and bottling.
Cellaring Notes Crafted for immediate enjoyment but will cellar over a long term under ideal conditions.

    I found this 2012 Aussie Cabernet Sauvignon waiting patiently, as I was looking through my “wines I should drink tonight" closet. I thought if any wine here is going to give me the full monty exposing every layer, nuance and lip smacking drop of deliciousness this will be it. The guy who sent me this has a little insight into what pleases my particularly finicky palate, and he hit the nail on the head with this sample. Produced only in the best vintages and 2012 was certainly one of those in the Clare Valley region of Australia this single vineyard designate was a perfect partner for the wild game I was serving for the evening. The Taylor family has been farming 440 acres of wine grapes in Clare Valley since 1969 and consistently winning awards since 1973. An interesting fact the Clare Valley Region contributes around 2% of the Australian national grape crush but wins over 7% of all medals awarded for Australian wine. The wine showcases the classic Clare Valley “terra rossa” terroir the valley is known for while sending a barrage of flower, fruit and herb scents to the olfactory senses. The red and black fruit parades past the palate and picks up notes of tobacco and savory herbs on the finish. We matched this Cabernet Sauvignon with a braised Water Buffalo dish that brought out the unctuous, beefy, game flavors in the meat.

    Nearly opaque deep purple in color, this wine showcases warm brown spices, vanilla and black pepper, framing a solid core of black and blue berry fruit. Surprisingly elegant on the palate, showing a velvety texture. Refined, yet powerful.

    Surprising for its more medium-to-fuller-bodied feel, rather than full throttle, it's a well-balanced wine of plush, plummy fruit matched ably with splintery oak character and a lemony, salty finish. Complex and serious. Built for cooler days.

    (fermented and aged in new and used American oak barrels): Inky ruby. Oak-spiced aromas of candied blackberry and boysenberry, with suave sandalwood and spicecake accents and hints of vanilla and licorice. Fleshy black and blue fruit flavors show very good concentration as well as vivacity. Finishes broad, gently sweet and persistent, with lush, pliant tannins that fold into the ripe dark fruit.

    Very Fine Quality. A supple, finely flavored Shiraz that combines richness, positive character and complexity. It is well balanced, lightly oaked, very long on the palate and very persistent in the finish, tasting of cherry, blueberry, plum, toast and oak.
