The aim with this wine was to showcase the power and finesse of our estate grown Clare Valley Cabernet Sauvignon.
Sticky
At release, the wine is a deep, dark red colour with a subtle purple hue to the edge.
The wine has an enticing, lifted bouquet of blackcurrants, blackberry and a hint of licorice and spice. The overall aroma is one of understated richness.
On the palate it is a very well-balanced wine with ripe blackcurrant fruit characters, with savoury oak flavours mingling harmoniously. There is great flavour but at the same time, amazing elegance to the wine, finishing with long, fine tannins; the hallmark of classic Clare Valley Cabernet Sauvignon.
The aim is to craft a wine that displays full-flavours but yet has a level of delicacy and finesse. To this end, the grapes were harvested in the cool of the early morning before being gently de-stemmed to protect the fruit characters and minimise any maceration and extraction of harsh tannins. Fermentation was carried out in the winery's original 'Potter' fermenters, which allow for excellent control of skin maceration and colour & tannin extraction. Some parcels were left on skins for a further 2 weeks to increase tannin structure of the overall wine. The wine was gently pressed to French oak barrels for completion of malolactic fermentation. Post MLF the wine was matured for just over 14 months in new French oak barrels prior to final blending and then preparation for bottling.
Cabernet Sauvignon is one of the world's most widely recognized red wine grape varieties. It is grown in nearly every major wine producing country. The variety gained international recognition through its prominence in Bordeaux wines. For most of the 20th century, it was the world's most widely planted premium red wine grape until it was surpassed by Merlot in the 1990s. Despite its prominence, the grape is a relatively new variety, the product of a chance crossing between Cabernet Franc and Sauvignon blanc during the 17th century in southwestern France. Cool climates tend to produce full-bodied wines with high tannins and noticeable acidity which contributes to the wine’s aging potential. Cabernet Sauvignon was first planted on the Taylor family estate in 1969 and currently there is 151 ha planted across 37 separate blocks on the estate. This particular parcel was a project undertaken by the winemakers to investigate a new oak regime and was subsequently released under the TWP label exclusively for cellar door.
