TWP stands for Taylors Winemaker's Project
This wine displays a lifted perfume of violets whilst flavours of juicy blackcurrant & plums delight against a backdrop of fine grained tannins and savoury French oak.
Sticky
At release the wine is a vibrant deep crimson.
At release the wine displays appealing aromas of violets, cassis and plum along with savoury cedar notes from the oak maturation.
This is a wine of sublime texture. The structure builds across the palate resulting in a wine of rare completeness. Rich flavours of blackcurrant, plum and heady spice delight the senses and the finish is satisfyingly long.
In assembling the final blend for bottling, our winemakers were searching for a finished wine in which the contribution of each assembled part made greater the whole, yet which presented a degree of refinement and seamlessness in a blended varietal wine that is so often elusive. The final blend represents Cabernet Sauvignon (53%), Merlot (33%), Malbec (8%), Cabernet Franc (6%)
The fruit, once harvested, was quickly transported to the winery, gently destemmed and then transferred to static fermenters. A relatively cool fermentation ensued - to retain aromatic intensity - using a Bordeaux-specific yeast strain. Post fermentation, the wine was pressed and then transferred to French oak barrels for secondary malolactic fermentation. Once completed, the wine was matured in French oak barrels (30% new, 70% 2 - 3 year old) prior to being bottled in April 2014.
Our winemakers have selected the various parcels that make up this special blend from the best examples of each variety from the Taylor family's own vineyards and also local growers. The Cabernet Sauvignon, sourced from the St Andrews vineyard was selected based on the intensity of the cassis characters and the fine tannin length achieved thorough optimal ripening conditions. With the Merlot component, the winemaker was seeking to flesh out the mid palate and this fruit was also sourced from the St. Andrews vineyard. These blocks are particularly low-yielding delivering an average of just under 3 tonnes per acre. The Malbec contributed ripe berry and licorice characters whilst the Cabernet Franc was selected for its lightness and subtle herbaceousness. These parcels were sourced from a Coonawarra grower with much experience tending these varieties.

Drinking superbly at release yet should cellar well under ideal conditions to 2021 possibly longer.
