A Shiraz that displays all of the full-flavours one would expect from the Clare balanced with a sublime textural element.
Sticky
At release the wine is a dark red colour with ruby red hues.
The wine has a seductive, lifted aroma characterised by plum, blackcurrant and dark cherry fruits along with rich, oak derived mocha.
On the palate, the wine delivers flavoursome red berry fruits bound tightly to the structure of firm, yet velvety textured tannins. There are alluring, oak and fine dark chocolate characters, with a frame of elegant acid. The wine is completed by a finish that lingers most enjoyably.
The aim is to craft a wine that balances the full-flavours of Shiraz with a palate structure focused on sublime texture, creating a wine with ultimate finesse. To this end, the grapes were harvested in the cool of the early morning before being gently de-stemmed to protect the vibrant fruit characters and minimise any maceration and extraction of harsh tannins. The fruit was then transferred to static stainless steel tanks for fermentation. The fermenting must was mixed twice daily using an inert gas to aid gentle extraction before being pressed and transferred to 10% French oak and the remainder in water bent American oak barrels for secondary, malolactic fermentation. Post MLF, the wine was transferred to American oak and matured for 18 months. After minimal fining and filtration, the wine was bottled in February 2017.
Shiraz (also known as Syrah) is a dark-skinned grape used primarily to produce red wine. The style and flavor profile of Shiraz is influenced by the climate where the grapes are grown. Moderate climates tend to produce medium to full-bodied wines with flavours of blackberry and black pepper notes. In warmer climates, the wines are more consistently full-bodied with softer tannin, richer fruit and spice notes of licorice, anise and earthy leather. Generally, the acidity and tannin level of Shiraz allows the wines produced from the grape to have favourable aging potential. Shiraz was first planted on the Taylor family estate in 1969 and currently there is 150 ha planted across 20 separate blocks on the estate. This particular parcel was a project undertaken by the winemakers to investigate a new oak regime and was subsequently released under the TWP label exclusively for cellar door.
