In a recent study conducted by Sydney Wine Academy in conjunction with Taylors Wines, a panel of everyday Australian palates have debunked the age-old wine myth of whether red wine should be stored in the fridge. The study revealed 71% of Australians are prepared to pay more for wine when served at a chilled temperature.
In a blind tasting of Taylors Estate Shiraz 2016 served at two temperatures - room temperature and at 17 degrees C - 100% of tasters could not recognise the two wines shown side by side were exactly the same. In fact, when asked how much they would pay for each wine, 71% would pay substantially more for the shiraz served at the cooler temperature.
Whilst it’s widely accepted that red wines should be served at room temperature, the aim of this latest study was to prove that red wines served slightly chilled are far more enjoyable than reds served at room temperature.
On the front foot of this research, Taylors Wines introduced its Optimum Drinking Temperature sensor across a number of ranges in 2014, in a bid to help further educate Australians at home. Using thermo-chromatic ink technology that changes colour depending on the temperature of the wine, Aussies can swipe their thumb across the temperature indicator to check if their wine is ready to drink.
Australia is a renowned region for producing quality wines, however the nation’s warmer climate, particularly in summer when temperatures rise between 26º-36ºC, is having a negative impact on wines being stored at home and subsequently, our enjoyment of our classic Aussie reds.

However, most wine lovers don’t realise that the warm Australian climate is not so great for storing and drinking wine.”
“We are encouraging Australians to experience for themselves that a shiraz or tempranillo over summer, served at the correct temperature, can be one of the summer season’s greatest refreshments,” remarks Taylor.
“The key is to recognise the importance of temperature with red wine best served between 12°C-18°C depending on the variety,” says Taylor.

To get the most out of your red wines this summer, follow these simple steps:
1. Select a bottle of red wine to test
2. We suggest a Shiraz but play around with red varietals
3. From that bottle, pour a small tasting for your group, at room temperature
4. Put the remainder bottle in the fridge to chill
5. Taste the room temperature wine and note its aromas and flavours
6. After 30 minutes, take your chilled bottle of wine out of the fridge
7. Now pour a glass of the chilled red and test the wine
8. Note the difference such as balanced and pronounced flavour
