Grilled Pork with Spiced Pineapple

Pork is a sweet rich protein that only needs to be treated simply to be enjoyed at its best. Well-seasoned with salt and cooked on a BBQ brings out all the flavours of the meat. Served with a refreshing, punchy salsa is ideal on a hot summers day with a perfectly chilled glass of red.
Ingredients
- 4 Pork cutlets
- 1 Whole pineapple
- 4 Truss tomatoes, pulp removed and finely diced
- 2 Corn cobs, kernels removed
- 1 Fresh green chilli, finely diced
- 1\/2 Red onion, finely diced
- 1 Red capsicum, finely diced
- 1\/4 Bunch fresh coriander, leaves picked and roughly chopped
- Lime Juice
- Olive oil
- Salt and pepper
Method
- Start by making the salsa. Peel and core the pineapple and finely dice \u00bc of it. In a frying pan over a medium high heat, cook the pineapple until it begins to char. Remove from the heat. Add in the corn to the hot pan and cook until it begins to blacken. Remove from the heat.
- In a large bowl, combine the charred corn and pineapple with the tomato, green chili, red onion and red capsicum and mix. Add in the chopped coriander a good squeeze of lime juice and season to taste with salt and pepper.
- Cut the remaining pineapple into wedges and skewer.
- Allow the pork cutlets to come to room temperature and season with salt. Heat the BBQ to medium high heat and cook the pork for 4 minutes on each side until cooked through. Remove from the heat and allow to rest.
- While the pork is resting, cook the pineapple skewers on the BBQ in the pork juices that remain and season generously with freshly milled black pepper. Once the pineapple begins to caramelise, remove from the heat.
- Serve the pork cutlets with a serve of the salsa and a pineapple wedge and squeeze of fresh lime.
