Our Winemaking Team

Where precision meets passion

At Taylors, winemaking is more than craft, it’s a calling shared by passionate individuals committed to excellence in every drop. Led by three generations of family and a team of award-winning winemakers, we combine tradition, innovation and instinct to create wines that quietly elevate every moment.

CHAIRMAN & THIRD GENERATION WINEMAKER

Mitchell Taylor

As part of the third generation of Taylor family winemakers, Mitchell is resolute in his pursuit of perfection when it comes to crafting fine Australian wines. Having graduated from the Bachelor of Science - Oenology at Charles Sturt University in 1995 and completing vintages as a winemaker from 1989 – 1997, Mitchell is closely involved in Taylors winemaking. Under Mitchell's guidance the Taylors winemaking team seek to craft Australian wines that rival the best in the world.

CHIEF WINEMAKER

Adam Eggins

Adam's innovative approach, renowned skill and expertise in the craft of winemaking consistently earns critical acclaim for the wines produced at Taylors. When Adam Eggins moved to Oberon in NSW some time ago, it was the beginning of a wine odyssey that would culminate in him joining Taylors in 1999. His first vintage with Taylors in 2000 was a baptism of fire, with drought conditions seriously affecting yields. But with the 2001 vintage, he demonstrated his skills as a great winemaker, crafting wines that drew accolades from around the world. Adam's dedication to the craft, and passion for truly great wines was duly credited in 2006, when he was awarded Australian Winemaker of the Year by Winestate Magazine –“ and was a finalist again in 2007 and 2010!

SENIOR WINEMAKER

Chad Bowman

A true local, Chad was born and bred in the Clare Valley, growing up surrounded by his family's vineyards you could say wine is definitely in his blood. Chad joined the Taylors winemaking team in January 2003 as an assistant. Having enrolled to study a Bachelor of Applied Science (Wine Science) at Charles Sturt University he welcomed the opportunity afforded to him by Taylors to put into practice what he was learning. After successfully graduating in 2012, Chad was promoted to the role of Winemaker and along with other members of the team, overseas all aspects of the winemaking process. Chad's drive to consistently improve the quality of the wines crafted at Taylors has seen awards and accolades continue to roll in for the wines from across the globe.

WINEMAKER

Thomas Darmody

Growing up near Kapunda on the edge of the Barossa Valley, Thomas fell in love with the idea of making wine after an inspirational stint as a cellar hand during vintage 2012. Soon after, he applied and was accepted to study oenology at the University of Adelaide. In his first year of study, Thomas felt that his ability to discuss finer points around the sensory attributes of wine was a little lacking for his liking and so sought out part time work in a cellar door where he would be actively tasting and discussing wines. Thomas was the inaugural recipient of the Elderton Winemaking Excellence Scholarship in 2016 and joined the Taylors winemaking team after graduating in December 2016.

ASSISTANT WINEMAKER

Dion Girolamo

A third-generation winemaker from McLaren Vale, Dion grew up surrounded by vines and cellar life, developing a lifelong love of wine while working alongside his father and grandfather in both the vineyard and the winery. After graduating with a Bachelor of Viticulture and Oenology from the University of Adelaide in 2023, Dion joined Taylors in 2024. He has a strong passion for learning every facet of winemaking and has quickly taken on responsibilities ranging from running trials to contributing to blending. Now firmly immersed in Clare Valley, Dion is embracing the opportunity to deepen his knowledge of the region’s unique wines and terroir.
