Apple Pie
Apple Pie

Everyone knows and loves apple pie. Piping hot, juicy, lightly spiced stewed apple encased in wholesome crisp pastry. Cool your tongue with a mouthful of luscious white wine.
Ingredients
- 2 sheets of sweet short pastry
- 4\u00bd cups granny smith apples, peeled cored and sliced
- 50 mls fresh lemon juice
- \u00bc cup white sugar
- 1\/3 cup raw sugar
- 1\/2 tsp salt
- 2 tsp cinnamon
- 2 cloves
- 2 tbsp butter
- 1 egg
Method
- Mix the apples, lemon juice, sugars, salt, cinnamon and cloves in a mixing bowl. Seat aside for \u00bd an hour.
- Strain apples, reserving liquid.
- Grease a large pie dish with butter and line with sweet short pastry. Put the apples into the pastry.
- Put the reserved juices in a saucepan, bring to boil and simmer until the mixture reduces to a syrup.
- Add butter and melt.
- Pour mixture over apple slices in the pastry.
- Top off the pie with the second sheet of pastry, crimp edges together.
- Brush top of pie with beaten egg.
- Put into a 190\u00ba oven for an hour or until juices bubble and apples and the crust turns golden brown.
