Lamb with Broccolini & Tahini

A simple delicious dish to whip up for an evening at home. The charred broccolini is balanced nicely against the sweetness from the honey in the tahini yogurt.
Ingredients
- 12 Frenched Lamb Cutlets
- 12 Slices of Prosciutto
- 12 Large Sage Leaves
- 12 Parmesan Slices (use a vegetable peeler)
- 4 Bunches of Broccolini
- 200g Greek Yogurt
- 1-2tbsp Tahini
- 1tbsp Honey
- 1\/2 Lemon, juiced
- Sesame Seeds
- Olive Oil
- Salt and Pepper
Method
- In a bowl, mix the yoghurt, tahini, honey, and lemon juice together until combined and season with salt to taste.
- Place a sage leaf on each cutlet followed by a slice of parmesan then wrap each cutlet with a slice of prosciutto.
- Over a medium hotplate on the BBQ, cook the cutlets for 2 minutes on each side or until the parmesan begins to melt. Remove from the heat and allow to rest.
- Meanwhile toss the Broccolini in olive oil and season with salt and pepper. Over the grill on the BBQ, cook the Broccolini until it begins to char and blacken a little.
- To serve, spoon some of the yoghurt mixture onto each plate, place the broccolini on top and garnish with a sprinkle of the sesame seeds and pile on the lamb cutlets to share.
