The luscious elegance of the Clare Valley fruit marries superbly with the slightly peppery fruit from McLaren Vale.
Sticky
At release, the wine has a deep crimson red colour to the centre with a vibrant purple hue to the edges. There are lifted aromas of red berry and cherry fruit along with subtle black olive and spice. This is a rich, full-bodied wine with intense flavours of ripe red berry fruit, violets and attractive oak characters of roasted coffee beans and dark chocolate. Overall, the wine is well balanced with complex, well-integrated tannins providing the palate with an intense, persistent length.
The grapes were gently de-stemmed and transferred to small static stainless steel fermenters. Half of the grapes were cold soaked at 6 degrees C for 5 days to deliver increased fruit expression. The fruit was then fermented at a constant warm temperature using a Shiraz-specific yeast isolate. Gentle mixing using inert gas occurred 2 – 3 times over the course of the day. The wine was then gently pressed to a mixture of American oak hogshead and barrique barrels (30% 1 year old, 70% 2 – 3 year old) for secondary, malo-lactic fermentation. Post MLF, the wine was transferred back to barrel for maturation before being fined, filtered and bottled in November 2017. This blend is - Clare Valley 63%, McLaren Vale 37%.
In the Clare Valley, rainfall was below average for the season, but it was not the amount that had the biggest impact; it was the timing. Mother Nature saw fit to dole out just the right amount of water at just the right time for maximum positive impact on the vine’s health and importantly, the quality of the fruit produced. In fact, this was just one of the factors at play when it comes to the vintage being lauded as one of the greats. Firstly, the vines were ‘stress free’ heading into the winter period, creating the potential for a superior crop. Secondly, conditions were ideal during flowering and then lastly, the threat of frost did not eventuate. All these conditions combined to create what called be described as ‘the perfect storm’ for an excellent vintage. In McLaren Vale, the growing season leading up to vintage 2016 saw lower than average winter rainfall followed by long dry periods. Spring was warm and dry which promoted good shoot growth and even flowering. At the beginning of February, the region received double the average monthly rainfall over two days due to one storm. However, far from having a negative effect, the intense rain increased the yields at harvest and relieved any water stress on the vines. Shiraz again standing out as one of those varieties that traditionally fare well in dry seasons.
