At release, the wine is a deep bright garnet red colour.
The wine has an enticing bouquet of fresh cedar wood, layered with red and black fruits, particularly cassis and violets. The overall aroma is fresh and luxurious.
This is a full-bodied Cabernet with fresh, complex fruit upfront, leading to a seamless, powerful back palate. The tannins are energetic and fine-grained, with a slight youthful grip, complemented by layers of tobacco and cedar from the
French oak. The wine has an imposing character, yet a veil of delicacy and grace lingers on the long, wonderful persistent finish.
Following fermentation, the wine was matured in a selection of fine-grained and ultra-fine-grained French oak hogsheads. The barrels, primarily with a blonde or
long light toast, impart minimal char, allowing the natural character of the wine to shine through.
The season for vintage 2021 in the Clare Valley was characterised by a mild La Niña pattern, bringing cool weather, modest rainfall, and a late, slow harvest. These conditions were ideal for Cabernet Sauvignon, thriving in cooler climates. The cooler weather allowed the vines more time to ripen slowly, leading to a greater development of varietal aromatic compounds. This extended ‘hang time’
produced wines with distinctive character. Our winemaking team considers 2021 one of the finest vintages for Cabernet Sauvignon in the past two decades.
Crafted for immediate enjoyment but will cellar over a long term under ideal conditions.
