Cabernet Sauvignon
Single Variety
Clare Valley 72% / Coonawarra 28%
At release, the wine has a deep ruby red colour to the centre with a youthful purple hue to the edges.
There are lifted aromas of dark blackcurrant fruit along with subtle choc-mint and a hint of eucalypt.
On the palate, this is a rich, full-bodied wine with intense flavours of cassis and blackberry fruit along with attractive oak characters of cigar box and tobacco leaf. Overall, the wine is well balanced with complex, well-integrated, elegant tannins providing structure and an intense, persistent length to the finish.
A percentage of the wine was barrel fermented and the final blend was matured in high quality, water-bent American oak barrels for 20 months prior to filtering and bottling.
The 2012 vintage is described as excellent by all winemakers. Good winter rains and a lack of frost resulted in optimal conditions throughout the growing season, however above average temperatures from November to January did result in lower yields in most varieties. January was also very dry and these dryer than normal conditions progressed into February, although later in the month a period of very cool nights and mild but warm days set in which served to effectively slow the ripening process. The grapes thus had time to reach optimum ripening maturity and overall, the red varieties are highly coloured, concentrated and varietal. This promises to be a vintage to collect.
Crafted for immediate enjoyment but will cellar over a long term under ideal conditions.
