Colour A dark red-black core framed by a crimson rim.
Nose The wine is attractively scented with wild berry and bramble hints backgrounded by light chocolate and mint notes with a subtle smoky cigar air from extended premium oak maturation.
Palate The wine delivers a focused, upfront berry and summer fruits profile that jumps straight to the centre of attention and is counterbalanced by a mouth-watering freshness. There is a ripe and highly integrated tannin and oak firmness to the focused, long finish. This wine has lovely dimensions and a poised elegance and depth that reflects it’s carefully selected provenance, vinification and cellaring.
Vintage Conditions The Clare Valley growing season saw slightly higher than average amounts of rainfall initially and then very little fell, making it the driest ever August recorded at the estate. Rainfall for spring was well below average and it was also warm and windy. These conditions had a detrimental impact on bunch numbers. December and January were relatively mild, with rain falling during the second week of January. The moisture was a welcome relief after such a dry spring and the varieties on the estate responding well for quality.
Oak Maturation The wine was initially matured in a selection of fine-grained French oak barrels – 50 % in new oak and the balance in a selection of two and three year old barrels. After 12 months a barrel selection assessment was undertaken to identify parcels deemed as ‘exceptional’ and these were returned to barrel for a further 12 months maturation prior to bottling in August 2018.

    Deep, rich crimson colour with a good tint of purple. The bouquet shows blackberry and various dark fruits with a patina of tobacco and toasty development and a very subtle lacing of mint. The wine is quite sweet in the centre from very ripe fruit, while the overall flavour is showing development and the beginnings of mellowness. The tannins add a savoury feel and a clean, drying finish. A very solid wine.

There's a lift of acidity on the palate that's almost unexpected alongside the plush fruit. The tannins are powerful and chiseled but well placed, ensuring a long life in the bottle, until 2035, at least.

    The extraction regime here is apt given the varietal code we are dealing with: cabernet and its unfettered structural mettle. Extended skin contact and malolactic in barrel evinces both authority and a creamy palate-feel. Then, cabernet's potpourri of herb-doused tannins mingle with currant, olive and graphite to pencil lead scents. Following 12 months in new French wood. A barrel-by-barrel selection was made. The result is both salubrious and persuasive. More so than the shiraz. The pH metre big company tingly.

    The 2015 Cabernet Sauvignon is luscious in texture, concentrated, and very complex in flavour (blackberry, black currant, red currant jam, tobacco, eucalyptus mint, cedar), with good balance, and a long, full finish. Just beginning to evolve; warrants further aging. Produced from the best fruit from the family's Auburn estate; named for the winery's visionary founder, Bill Taylor. This is the 6th vintage. Aged 24 months in French oak barrels, partly new.
