Tasting Notes

Nose: Red and black fruit abound which are herbaceous yet ripe. Plum blackberry, cassis and violets. There is also black pepper and dried herbs on the edges which is complexed by leather and tobacco notes from oak maturation.

Palate:A generous ripe varietal Cabernet Sauvignon with chocolate and red fruit with classic varietal line and length. Ample fruit sweetness and varietal strong fine grain tannins drive the palate. The wine is soft & fleshy from the cold 2023 vintage with good varietal form and should cellar well to 2028-2032.

Colour: Wonderful rich deep garnet red with crimson hue. Deep colour hinting at good fruit concentration. Brilliant clarity.

Wine Body:

Oak Maturation: Barrel maturation is predominantly French Oak Hogsheads often in the realm of 4-6 years old for Estate Cabernet Sauvignon. The barrels are stored cold ~ 12-14 degrees Celsius and may stay in barrel for 12-14 months by taste. Estate Cabernet Sauvignon should exhibit both varietal and regional fruit expression and so the oak choice is older oak to enhance the natural fruit expression from the cool 2023 vintage.

Vintage Condition: Cabernet Sauvignon is usually our latest grape to harvest and in the cool 2023 season this resulted in Clare Valley being harvested in late March and Limestone Coast being harvested in early to mid April. Padthaway first, then Wrattonbully and finally Coonawarra. Machine harvesting is undertaken in the coolest part of the day with fruit shipped quickly to the winery for processing.

Cellaring Notes: The wine is soft & fleshy from the cold 2023 vintage with good varietal form and should cellar well to 2028-2032.
