Chocolate Raspberry Pudding

This warm & decadent chocolate raspberry self-saucing pudding recipe will curb your comfort food cravings.
Ingredients
- 1 cup Plain flour
- 2 tsp Baking Powder
- 2 tbsp Dutch cocoa powder
- 2 tbs Caster sugar
- \u00bd cup Milk
- 80g Butter melted
- 100g Frozen raspberries
- 1 tbs Dutch cocoa powder (extra)
- 1 Egg
- 100g Brown sugar
- 1 \u00bd cup Chocolate custard
- 1 cup Water
Method
- Preheat over to 180 degrees celsius.
- Put brown sugar, custard and water into a small saucepan and set aside.
- Put flour, baking powder, cocoa and sugar into a baking dish. The best size would be around 25cm long and 5 cm deep) and stir well to combine.
- Mix the warm melted butter, milk and egg together in a bowl then pour this into the baking dish and whisk through the flour mixture to form a batter.
- Press the raspberries evenly into the batter and sprinkle the top of the batter with the extra cocoa powder.
- Heat the custard mixture until just under boiling point, stirring to prevent it sticking.
- Pour this hot mixture over the batter and then put into the oven, Bake for 25 minutes, then take out and stand for 5-10 minutes.
- Serve warm with your choice of ice cream, custard or thickened cream.
